In food and beverage packing, the most aggressive thing a machine faces is not the product. It is the cleaning routine: hot water, caustic and acidic detergents, sanitiser, and in many plants a high pressure hose aimed directly at the components. Standard industrial parts are not built for that, and they fail in a predictable order. Plated fittings corrode and shed particles, elastomers swell or harden depending on the chemistry, cable glands admit water, and hose covers craze and split.
Designing for washdown means choosing materials before problems appear. Stainless fittings and tube in place of plated steel, seal compounds selected for the actual detergent in use rather than for water, protective conduit and sleeving rated for the temperature and the jet, and enclosure ratings appropriate to how the machine is really cleaned. It also means designing out the details that trap soil: threads left exposed, horizontal ledges that hold water, and crevices that no jet can reach.
Where lubricants can contact product, food-grade classification matters as much as performance, and it should be documented rather than assumed. This is the practical core of industrial sealing and protection packaging plants need, and it is far cheaper to specify at design time than to discover through a batch of contaminated packs.

The argument is usually framed as a competition, which is the wrong frame. On a real packing machine the answer is almost always both, decided axis by axis. Pneumatics win where the motion is a simple stroke between two ends, where the duty is fast and repetitive, and where the cost of an actuator matters more than the cost of a millisecond. They are simple to install, tolerant of abuse, and easy for a maintenance team to fix at three in the morning.
Servo wins where the motion profile itself is the product. Film registration, variable indexing, gentle placement of fragile items, and any axis that must change behaviour between recipes belong to electromechanical motion control packaging technology, because a program change replaces a mechanical adjustment. Servo also earns its place on high-duty axes where compressed air consumption becomes a permanent operating cost.
The honest comparison is lifetime, not purchase price. Pneumatic hardware costs less to buy and more to feed; servo costs more to buy and far less to run, and it pays back fastest on axes that cycle constantly or change often.
